Gluten Free Friday ~ I Need Some Green Stuff Smoothie {Lent Day #17}

While I’m not really fasting for Lent, I will at least confess that it is difficult to maintain a healthy diet while being away from home and surrounded by all kinds of indulgences.  Last weekend, while away at a women’s retreat, presented just such a dilemma.  There were gluten free paninis for lunch, gluten free baked french toast {oh my!} for breakfast, gluten free cupcakes for dessert, chocolate fondue for dipping fruit….and BACON.  Just lots of delicious carbs {and gluten free carbs always seem double starchy/sugary} and sugar! I did eat a salad or two, but I felt in desperate need of an abundance of green stuff this week.  Even my hubby insisted on a quick stop at Whole Foods after our gym workout on Wednesday, so that he could purchase green juice.  He was feeling depleted, and so was I.  We both think the green stuff is working. ☺

 We had a couple of bags of spinach hanging around, and I had frozen some bananas a while back, so this is the smoothie I’ve had several times this week for breakfast.

I Need Some Green Stuff Smoothie

1 cup packed spinach
1 inch chunk cucumber
1 frozen banana
1/2 cup coconut milk {the kind in the refrigerated section, not the can}
1/2 cup water
1 tsp flax oil
1 Tbsp peanut butter

Place all ingredients in blender and blend until smooth.

Kory expressed concern over my bright green breakfast this morning, so I made him try a spoonful.  He was surprised at it’s non-green taste!
