Gluten Free Friday

Crunchy Cornbread

1 cup GF flour
1 cup cornmeal
1/4 cup sugar
4 tsp baking powder
1/2 tsp salt
! cup milk (soy/rice/almond OK, too)
1/4 cup oil
1 egg
Crushed corn chips (Fritos)

Mix dry ingredients together. Add milk, oil, and egg and stir until blended. Pour into greased 8×8 baking dish or muffin tin, and sprinkle crushed corn chips on top. Bake 20 minutes at 400 deg.

    I want to see all you’re making too – I like the idea of a post holiday hang out. Oh, and I have a little gift for you (little). I will be at Christina’s in the afternoon on Wednesday making gingerbread houses if you would like to pop by?? I miss you honey!!
