Gluten Free Friday – Brown Sandwich Bread

We have just returned from a three week trip to Texas which is why I have not had time to post. I have been working on this bread recipe for a while, though. It was inspired by the Oct./Nov. issue of Living Without Magazine which featured several different bread recipes. I took one for a brown bean bread and adjusted it quite a bit. It makes a really nice tasting, slice-able sandwich bread. I still can’t get it to rise quite as much as I’d like, but I’m posting it anyway. If you have GF bread-rising tips, just let me know!

Brown Sandwich Bread

2 1/4 cups GF flour mix (I use rice/tapioca/potato)
1/4 cup almond flour
1/4 cup flax meal
2 tsp xanthan gum
1 tsp salt
2 Tbsp brown sugar
1 Tbsp (or 1 packet) granulated yeast
2 large eggs
1 Tbsp molasses
5 Tbsp honey, agave, or maple syrup
1 tsp cider vinegar
4 Tbsp canola oil or butter
1 cup warm water

Mix all dry ingredients together – flour mix, almond flour, flax meal, xanthan gum, salt, brown sugar, yeast. In a separate bowl mix liquid ingredients together – eggs, molasses, honey, vinegar, oil, and water. Add dry ingredients to liquid and mix well – about 4 minutes. Pour dough into greased loaf pan – 8 or 9 inch. Cover and let rise for about 45 minutes – until doubled in bulk. Bake 45 minutes at 400*. Cool and slice thin with serrated knife.
